Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 ripe bananas, mashed
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix together the dry ingredients: flour, baking powder, salt, and sugar.
  3. In another bowl, combine the wet ingredients: cocoa powder, softened butter, eggs, mashed bananas, and vanilla extract.
  4. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes

Use very ripe bananas for the best flavor. Don’t overmix the batter to ensure a tender texture. Optional: add chocolate chips or nuts for extra richness.
