- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 2 ripe bananas, mashed
- 2 teaspoons vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, mix together the dry ingredients: flour, baking powder, salt, and sugar.
- In another bowl, combine the wet ingredients: cocoa powder, softened butter, eggs, mashed bananas, and vanilla extract.
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- Pour the batter into the prepared loaf pan.
- Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
Notes
Use very ripe bananas for the best flavor. Don’t overmix the batter to ensure a tender texture. Optional: add chocolate chips or nuts for extra richness.
