Ingredients

  • 1 1/2 cups crushed cookies
  • 1/2 cup melted butter
  • 8 oz white chocolate
  • 2 cups heavy cream
  • 8 oz cream cheese
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 cup raspberries
  • 1/2 cup assorted chocolates
  • 1 cup white chocolate ganache

Instructions

  1. Mix the crushed cookies with melted butter and press them into a pan to form the crust.
  2. Melt the white chocolate and let it cool slightly.
  3. In a separate bowl, whip the heavy cream until soft peaks form.
  4. Beat the cream cheese, sugar, and vanilla extract together until smooth.
  5. Fold the melted white chocolate into the cream cheese mixture, then gently fold in the whipped cream.
  6. Layer this mixture over the crust, then add fresh raspberries and assorted chocolates on top.
  7. Pour the white chocolate ganache over the entire dessert.
  8. Chill for at least 4 hours before serving.

Notes

Serve cold, with extra raspberries or a drizzle of chocolate sauce if desired. Store leftovers in the refrigerator for up to three days.
