Description

A delightful twist on the classic deviled eggs, combining creamy egg noodles with traditional flavors.


Ingredients

  • 8 oz wide egg noodles, cooked & cooled
  • 1/2 cup mayonnaise
  • 2 tbsp yellow mustard
  • 3 hard-boiled eggs, mashed
  • 1/2 red bell pepper, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp relish or chopped pickles
  • 1 tsp paprika
  • Salt & pepper, to taste
  • Chopped chives, for garnish

Instructions

  1. In a bowl, mix the mayonnaise, mustard, mashed eggs, relish, paprika, salt, and pepper until well combined.
  2. Toss in the cooked noodles, sliced bell pepper, and onion. Mix everything until the noodles are well coated.
  3. Chill the salad in the refrigerator for at least 30 minutes.
  4. Before serving, garnish with chopped chives for a fresh touch.

Notes

Make sure the noodles are completely cooled before mixing. Customize with vegetables or Greek yogurt for a lighter option.
