- 20 Oreo cookies, crushed
- 1/4 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 3/4 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup heavy cream
- 1 cup strawberry puree
- 1 tbsp gelatin
- 1/4 cup water
- Pink food coloring
- Whipped cream for topping
Instructions
- Preheat your oven to 325°F (160°C) and line an 8-inch square pan with parchment paper.
- Mix the crushed Oreos with melted butter until well combined and press into the bottom of the pan to form a crust.
- Beat the softened cream cheese and sugar until smooth and creamy.
- Add the eggs and vanilla extract to the cream cheese mixture, then fold in the heavy cream until fully mixed.
- Pour half of this mixture over the crust and bake for 15 minutes.
- Dissolve the gelatin in the water and mix with the strawberry puree and a few drops of pink food coloring.
- Blend the remaining cream cheese mixture with the strawberry mix.
- Pour this over the baked layer once it has cooled and chill in the refrigerator for at least 4 hours until set.
- Cut into squares and top with whipped cream and crushed Oreo.
Notes
For a richer texture, use full-fat cream cheese. Adjust strawberry puree for desired fruitiness.
