Ingredients

- 200g crushed Maria cookies
- 100g melted butter
- 400g cream cheese
- 1 cup whipping cream
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 cup tropical fruits (mango, pineapple, strawberries, kiwi)
- 2 sachets of gelatin hydrated in 1/2 cup water
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix crushed Maria cookies with melted butter until combined and press into the bottom of a cheesecake pan to form the crust.
- In a large mixing bowl, whip the cream cheese until smooth.
- Gradually add sugar and vanilla extract, mixing well.
- In another bowl, whip the cream until stiff peaks form and fold into the cream cheese mixture.
- Dissolve the hydrated gelatin in hot water and fold into the cheesecake mixture.
- Carefully mix in the tropical fruits.
- Pour the cheesecake mixture over the crust and smooth the top.
- Refrigerate for at least 240 minutes or until set.
- Serve chilled and enjoy!
Notes
For decoration, add extra fruit or drizzle with honey. This cheesecake can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
