Description

A creamy and fruity cheesecake topped with a delightful mix of tropical fruits, perfect for any celebration.


Ingredients

  • 200g crushed Maria cookies
  • 100g melted butter
  • 400g cream cheese
  • 1 cup whipping cream
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup tropical fruits (mango, pineapple, strawberries, kiwi)
  • 2 sachets of gelatin hydrated in 1/2 cup water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix crushed Maria cookies with melted butter until combined and press into the bottom of a cheesecake pan to form the crust.
  3. In a large mixing bowl, whip the cream cheese until smooth.
  4. Gradually add sugar and vanilla extract, mixing well.
  5. In another bowl, whip the cream until stiff peaks form and fold into the cream cheese mixture.
  6. Dissolve the hydrated gelatin in hot water and fold into the cheesecake mixture.
  7. Carefully mix in the tropical fruits.
  8. Pour the cheesecake mixture over the crust and smooth the top.
  9. Refrigerate for at least 240 minutes or until set.
  10. Serve chilled and enjoy!

Notes

For decoration, add extra fruit or drizzle with honey. This cheesecake can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
