Delicious Chocolate Chip Cookie Dough Ice Cream Cake

A delightful dessert combining cookie dough and ice cream, perfect for celebrations.


Ingredients

  • 2 cups chocolate sandwich cookie crumbs (like Oreo)
  • 1/4 cup unsalted butter, melted
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup mini chocolate chips
  • 1.5 quarts vanilla ice cream, softened
  • 1.5 quarts chocolate chip cookie dough ice cream, softened
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy whipping cream

Instructions

  1. Grease a 9-inch springform pan. Combine the chocolate sandwich cookie crumbs and melted butter, then press this mixture into the bottom of the pan. Freeze for 10 minutes.
  2. Cream together the room-temperature butter and sugars until light and fluffy. Mix in the milk and vanilla extract until well combined. Gradually add the flour and mix until smooth, then fold in the mini chocolate chips.
  3. Spread half of the vanilla ice cream over the crust in the pan. Add half of the cookie dough mixture in chunks over the ice cream. Freeze this layer for 1 hour.
  4. Spread the chocolate chip cookie dough ice cream over the cookie dough layer. Add the remaining cookie dough mixture in chunks on top. Freeze for another hour.
  5. Spread the remaining vanilla ice cream over the top. Freeze the cake for 4-6 hours or overnight until firm.
  6. For the ganache, heat the heavy whipping cream until it simmers. Remove from heat, pour over the chocolate chips, and let sit for 2 minutes. Stir until smooth.
  7. Remove the cake from the springform pan and pour the ganache over the top. Freeze again for another 30 minutes before serving.

Notes

Use softened ice creams for easier layering. Experiment with different ice cream flavors!
