A delightful dessert combining layers of cookie dough and ice cream for an impressive treat.
Ingredients

- 2 cups chocolate sandwich cookie crumbs (like Oreo)
- 1/4 cup unsalted butter, melted
- 1/2 cup unsalted butter, room temperature
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup mini chocolate chips
- 1.5 quarts vanilla ice cream, softened
- 1.5 quarts chocolate chip cookie dough ice cream, softened
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy whipping cream
Instructions
- Grease a 9-inch springform pan.
- Combine the chocolate sandwich cookie crumbs and melted butter in a bowl. Press this mixture into the bottom of the pan.
- Freeze the crust for 10 minutes.
- To make the cookie dough, cream the room temperature butter with both sugars in a bowl until it’s light and fluffy.
- Add the milk and vanilla extract to the butter mixture and mix well.
- Add the flour and mix until smooth. Then, fold in the mini chocolate chips.
- Spread half of the vanilla ice cream over the crust in the pan.
- Add half of the cookie dough mixture in chunks over the ice cream layer.
- Freeze the cake for 1 hour.
- Spread the chocolate chip cookie dough ice cream over the cookie dough layer.
- Add the remaining cookie dough mixture in chunks on top of this layer.
- Freeze for another hour.
- Spread the remaining vanilla ice cream over the top layer.
- Freeze the cake for 4-6 hours or overnight until it is firm.
- To make the ganache, heat the heavy whipping cream in a small saucepan until it simmers.
- Remove it from heat and pour the hot cream over the semi-sweet chocolate chips.
- Let it sit for about 2 minutes, then stir until it becomes smooth.
- Remove the cake from the springform pan and pour the ganache over the top.
- Freeze the cake for another 30 minutes before serving.
Notes
Serve sliced with whipped cream or extra chocolate chips. Store leftovers in the freezer.
