Delicious Chocolate Chip Cookie Dough Ice Cream Cake

Description

A delightful dessert combining layers of cookie dough and ice cream for an impressive treat.


Ingredients

  • 2 cups chocolate sandwich cookie crumbs (like Oreo)
  • 1/4 cup unsalted butter, melted
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup mini chocolate chips
  • 1.5 quarts vanilla ice cream, softened
  • 1.5 quarts chocolate chip cookie dough ice cream, softened
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy whipping cream

Instructions

  1. Grease a 9-inch springform pan.
  2. Combine the chocolate sandwich cookie crumbs and melted butter in a bowl. Press this mixture into the bottom of the pan.
  3. Freeze the crust for 10 minutes.
  4. To make the cookie dough, cream the room temperature butter with both sugars in a bowl until it’s light and fluffy.
  5. Add the milk and vanilla extract to the butter mixture and mix well.
  6. Add the flour and mix until smooth. Then, fold in the mini chocolate chips.
  7. Spread half of the vanilla ice cream over the crust in the pan.
  8. Add half of the cookie dough mixture in chunks over the ice cream layer.
  9. Freeze the cake for 1 hour.
  10. Spread the chocolate chip cookie dough ice cream over the cookie dough layer.
  11. Add the remaining cookie dough mixture in chunks on top of this layer.
  12. Freeze for another hour.
  13. Spread the remaining vanilla ice cream over the top layer.
  14. Freeze the cake for 4-6 hours or overnight until it is firm.
  15. To make the ganache, heat the heavy whipping cream in a small saucepan until it simmers.
  16. Remove it from heat and pour the hot cream over the semi-sweet chocolate chips.
  17. Let it sit for about 2 minutes, then stir until it becomes smooth.
  18. Remove the cake from the springform pan and pour the ganache over the top.
  19. Freeze the cake for another 30 minutes before serving.

Notes

Serve sliced with whipped cream or extra chocolate chips. Store leftovers in the freezer.
