- 2 cups chocolate sandwich cookie crumbs (like Oreo)
- 1/4 cup unsalted butter, melted
- 1/2 cup unsalted butter, room temperature
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup mini chocolate chips
- 1.5 quarts vanilla ice cream, softened
- 1.5 quarts chocolate chip cookie dough ice cream, softened
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy whipping cream
Instructions
- Grease a 9-inch springform pan.
- In a bowl, combine the chocolate sandwich cookie crumbs and melted butter. Press this mixture into the bottom of the pan and freeze for 10 minutes.
- To make the cookie dough, cream together the 1/2 cup room temperature butter and sugars until light and fluffy.
- Mix in the milk and vanilla extract until well combined.
- Add the flour and mix until smooth, then fold in the mini chocolate chips.
- Spread half of the vanilla ice cream over the crust. Then, add half of the cookie dough mixture in chunks over the ice cream. Freeze for 1 hour.
- Spread the chocolate chip cookie dough ice cream over the cookie dough layer, then add the remaining cookie dough mixture in chunks on top. Freeze for another hour.
- Spread the remaining vanilla ice cream over the top layer and freeze for 4-6 hours or overnight until firm.
- To make the ganache, heat the heavy whipping cream in a small saucepan until it starts to simmer. Remove from heat and pour it over the chocolate chips. Let it sit for 2 minutes, then stir until smooth.
- Remove the cake from the springform pan and pour the ganache over the top. Freeze for another 30 minutes before serving.
Notes
Store any leftover cake in the freezer for up to 2 weeks. Ensure it’s tightly covered to prevent freezer burn.
