Description

A delightful summer treat that layers cookie dough and two types of ice cream, perfect for any occasion.


Ingredients

  • 2 cups chocolate sandwich cookie crumbs (like Oreo)
  • 1/4 cup unsalted butter, melted
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup mini chocolate chips
  • 1.5 quarts vanilla ice cream, softened
  • 1.5 quarts chocolate chip cookie dough ice cream, softened
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy whipping cream

Instructions

  1. Grease a 9-inch springform pan.
  2. In a bowl, combine the chocolate sandwich cookie crumbs and melted butter; mix well and press into the bottom of the pan.
  3. Freeze the crust for 10 minutes.
  4. In a separate bowl, beat room temperature butter, brown sugar, and granulated sugar together until light and fluffy.
  5. Add in the milk and vanilla extract; mix until combined.
  6. Stir in the flour until smooth, then gently fold in mini chocolate chips.
  7. Spread half of the vanilla ice cream over the crust.
  8. Add half of the cookie dough mixture in chunks over the ice cream layer.
  9. Freeze for 1 hour.
  10. Spread chocolate chip cookie dough ice cream over the cookie dough layer, followed by the remaining cookie dough mixture in chunks.
  11. Freeze for another hour.
  12. Spread the remaining vanilla ice cream over the top layer of the cake.
  13. Freeze the entire cake for 4-6 hours or overnight until solid.
  14. To make ganache, heat heavy whipping cream until simmering, pour over chocolate chips, let sit for 2 minutes, then stir until smooth.
  15. Carefully remove the cake from the pan and pour ganache over the top.
  16. Freeze for another 30 minutes before serving.

Notes

Make sure your ice creams are softened for easier layering. Use high-quality chocolate chips for better flavor.
