A delightful summer treat that layers cookie dough and two types of ice cream, perfect for any occasion.
Ingredients

- 2 cups chocolate sandwich cookie crumbs (like Oreo)
- 1/4 cup unsalted butter, melted
- 1/2 cup unsalted butter, room temperature
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup mini chocolate chips
- 1.5 quarts vanilla ice cream, softened
- 1.5 quarts chocolate chip cookie dough ice cream, softened
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy whipping cream
Instructions
- Grease a 9-inch springform pan.
- In a bowl, combine the chocolate sandwich cookie crumbs and melted butter; mix well and press into the bottom of the pan.
- Freeze the crust for 10 minutes.
- In a separate bowl, beat room temperature butter, brown sugar, and granulated sugar together until light and fluffy.
- Add in the milk and vanilla extract; mix until combined.
- Stir in the flour until smooth, then gently fold in mini chocolate chips.
- Spread half of the vanilla ice cream over the crust.
- Add half of the cookie dough mixture in chunks over the ice cream layer.
- Freeze for 1 hour.
- Spread chocolate chip cookie dough ice cream over the cookie dough layer, followed by the remaining cookie dough mixture in chunks.
- Freeze for another hour.
- Spread the remaining vanilla ice cream over the top layer of the cake.
- Freeze the entire cake for 4-6 hours or overnight until solid.
- To make ganache, heat heavy whipping cream until simmering, pour over chocolate chips, let sit for 2 minutes, then stir until smooth.
- Carefully remove the cake from the pan and pour ganache over the top.
- Freeze for another 30 minutes before serving.
Notes
Make sure your ice creams are softened for easier layering. Use high-quality chocolate chips for better flavor.
