Description

This cake combines two beloved desserts: cookie dough and ice cream, making it perfect for parties and special occasions.


Ingredients

  • 2 cups chocolate sandwich cookie crumbs (like Oreo)
  • 1/4 cup unsalted butter, melted
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup mini chocolate chips
  • 1.5 quarts vanilla ice cream, softened
  • 1.5 quarts chocolate chip cookie dough ice cream, softened
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy whipping cream

Instructions

  1. Grease a 9-inch springform pan.
  2. Combine chocolate sandwich cookie crumbs and melted butter in a bowl and press into the bottom of the pan; freeze for 10 minutes.
  3. Cream together the room temperature butter and both sugars until light and fluffy. Mix in the milk and vanilla extract until well combined.
  4. Add flour to the mixture and stir until smooth; gently fold in mini chocolate chips.
  5. Spread half of softened vanilla ice cream over the crust, add half of cookie dough mixture in chunks over it, and freeze for 1 hour.
  6. Spread chocolate chip cookie dough ice cream over the cookie dough layer, add remaining cookie dough mixture in chunks, and freeze for another hour.
  7. Spread remaining vanilla ice cream over the top and freeze for 4-6 hours or overnight until firm.
  8. For ganache, heat heavy whipping cream in a saucepan until simmering. Pour over semi-sweet chocolate chips, let sit for 2 minutes, then stir until smooth.
  9. Remove cake from pan, pour ganache over top, and freeze for another 30 minutes before serving.

Notes

Make sure ice creams are softened before layering for easier spreading and consider using different ice cream flavors for variety.
