Description

A creamy and crunchy ice cream cake that combines the best of vanilla and chocolate chip cookie dough flavors, perfect for any celebration.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup mini chocolate chips
  • 1 tbsp milk (if needed)
  • 1 1/2 quarts vanilla ice cream, softened
  • 1 1/2 quarts chocolate chip cookie dough ice cream, softened
  • 1 1/2 cups chocolate wafer cookies or graham crackers, crushed
  • 1/4 cup unsalted butter, melted
  • Whipped cream
  • Mini chocolate chips

Instructions

  1. In a bowl, beat together the softened butter, granulated sugar, brown sugar, and vanilla extract until creamy. Mix in the flour and salt, then fold in the mini chocolate chips. If the mixture is too thick, add a tablespoon of milk to loosen it. Set aside.
  2. In a separate bowl, mix the crushed cookies with the melted butter, then press this mixture into a 9-inch springform pan to form the crust. Freeze for 10 minutes to set.
  3. Layer the softened vanilla ice cream over the chilled crust and smooth it out. Add the cookie dough layer and spread it evenly. Top with the chocolate chip cookie dough ice cream and smooth it out. Freeze for at least 4 hours or overnight.
  4. Once set, top the cake with whipped cream and mini chocolate chips. Slice and serve.

Notes

Ensure ice creams are softened for easier spreading. Store leftovers covered in the freezer for up to a week.
