Description

Delicious mini treats that capture all the flavors of a traditional banana cream pie in an easy-to-eat form.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 1 cup heavy cream
  • 2 bananas, sliced
  • 1 cup vanilla pudding
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the graham cracker crumbs, melted butter, and sugar together until well combined.
  3. Press this mixture into mini pie tins to form the crusts.
  4. Bake the crusts for 8 minutes or until they are golden brown. Remove from the oven and allow them to cool completely.
  5. In another bowl, whip the heavy cream with the vanilla extract and a pinch of salt until stiff peaks form.
  6. Spread a layer of vanilla pudding into each cooled crust.
  7. Add the sliced bananas on top of the pudding layer.
  8. Top each pie bite with the whipped cream and garnish with extra banana slices if desired.
  9. Chill in the refrigerator for at least 1 hour before serving.

Notes

Use ripe but firm bananas for the best flavor and texture. Whip cream while cold for better results. Prepare the crust and vanilla pudding a day ahead to save time.
