Description

A delightful dessert combining rich chocolate cake layers with creamy strawberry ice cream.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1.5 quarts strawberry ice cream, softened
  • 1 cup heavy cream
  • 12 oz semi-sweet chocolate chips
  • Fresh strawberries, sliced
  • Chocolate shavings

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients and mix until well combined.
  4. Stir in the boiling water and pour the batter into the prepared pans.
  5. Bake for 30-35 minutes and let cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  6. Once cooled, place one cake layer on a serving plate and spread softened strawberry ice cream over the top.
  7. Carefully place the second layer on top of the ice cream and freeze the cake for at least 2 hours.
  8. For the ganache, heat the heavy cream in a small saucepan until simmering, then pour it over the chocolate chips. Let sit for 5 minutes and stir until smooth.
  9. Pour the ganache over the cake, letting it drip down the sides, and garnish with strawberry slices and chocolate shavings.
  10. Freeze the cake for another 30 minutes to set the ganache before serving.

Notes

For a cleaner slice, use a hot knife to cut the cake. You can also substitute vanilla ice cream or add fresh berries for variation.
