A delightful dessert combining rich chocolate cake layers with creamy strawberry ice cream.

- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1.5 quarts strawberry ice cream, softened
- 1 cup heavy cream
- 12 oz semi-sweet chocolate chips
- Fresh strawberries, sliced
- Chocolate shavings
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- Sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
- Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients and mix until well combined.
- Stir in the boiling water and pour the batter into the prepared pans.
- Bake for 30-35 minutes and let cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
- Once cooled, place one cake layer on a serving plate and spread softened strawberry ice cream over the top.
- Carefully place the second layer on top of the ice cream and freeze the cake for at least 2 hours.
- For the ganache, heat the heavy cream in a small saucepan until simmering, then pour it over the chocolate chips. Let sit for 5 minutes and stir until smooth.
- Pour the ganache over the cake, letting it drip down the sides, and garnish with strawberry slices and chocolate shavings.
- Freeze the cake for another 30 minutes to set the ganache before serving.
Notes
For a cleaner slice, use a hot knife to cut the cake. You can also substitute vanilla ice cream or add fresh berries for variation.
