Description

Ingredients

  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1.5 quarts strawberry ice cream, softened
  • 1 cup heavy cream
  • 12 oz semi-sweet chocolate chips
  • Fresh strawberries, sliced
  • Chocolate shavings

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, vegetable oil, and vanilla extract; mix until combined.
  4. Stir in boiling water to create a thin batter, then pour evenly into the prepared pans.
  5. Bake for 30-35 minutes, or until a toothpick comes out clean. Let cool for 10 minutes, then transfer to wire racks to cool completely.
  6. Once cooled, place one cake layer on a serving plate and spread softened strawberry ice cream over it.
  7. Top with the second cake layer and freeze for at least 2 hours.
  8. For ganache, heat heavy cream in a saucepan until simmering, then pour over chocolate chips in a bowl. Let sit for 5 minutes, then stir until smooth.
  9. Pour ganache over the frozen cake, letting it drip down the sides. Garnish with strawberry slices and chocolate shavings, then freeze for another 30 minutes.
  10. Serve cold and enjoy!

Notes

Let ice cream soften before spreading for easier assembly. Store in the freezer for up to 2 weeks.
