Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1.5 quarts strawberry ice cream, softened
  • 1 cup heavy cream
  • 12 oz semi-sweet chocolate chips
  • Fresh strawberries, sliced
  • Chocolate shavings

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.
  4. Stir in the boiling water to create a thin batter. Pour the batter evenly into the prepared pans.
  5. Bake for 30-35 minutes, or until a toothpick comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack.
  6. Once cooled, place one cake layer on a serving plate and spread the softened strawberry ice cream over the top.
  7. Top with the second cake layer and freeze for at least 2 hours, or until the ice cream is firm.
  8. For the ganache, heat the heavy cream in a small saucepan until it simmers. Pour over chocolate chips, let sit for 5 minutes, then stir until smooth.
  9. Pour the ganache over the frozen cake and garnish with strawberries and chocolate shavings. Freeze for another 30 minutes to set.
  10. Slice and serve cold, optionally adding extra strawberries or chocolate shavings for presentation.

Notes

Allow ice cream to soften slightly before spreading. Store in the freezer for up to 2 weeks.
