Description

A delicious treat combining moist chocolate cake with creamy strawberry ice cream, perfect for celebrations and summer desserts.


Ingredients

  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1.5 quarts strawberry ice cream, softened
  • 1 cup heavy cream
  • 12 oz semi-sweet chocolate chips
  • Fresh strawberries, sliced
  • Chocolate shavings

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, vegetable oil, and vanilla extract to dry ingredients and mix until well combined.
  4. Stir in boiling water; the batter will be thin. Pour into prepared pans and bake for 30-35 minutes.
  5. Allow cakes to cool for 10 minutes in pans, then transfer to a wire rack to cool completely.
  6. Once cooled, place one cake layer on a serving plate, spread strawberry ice cream over it, then add the second layer on top.
  7. Freeze for at least 2 hours until the ice cream is firm.
  8. For chocolate ganache, heat heavy cream until just simmering, pour over chocolate chips, let sit for 5 minutes, and stir until smooth.
  9. Pour ganache over the cake, allowing it to drip down the sides, and garnish with fresh strawberries and chocolate shavings.
  10. Freeze for another 30 minutes to set ganache before serving.

Notes

Ensure the cake layers are completely cooled before adding ice cream to prevent melting.
