Ingredients

  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1.5 quarts strawberry ice cream, softened
  • 1 cup heavy cream
  • 12 oz semi-sweet chocolate chips
  • Fresh strawberries, sliced
  • Chocolate shavings

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract, and mix well until the batter is smooth.
  4. Gradually stir in the boiling water (the batter will be thin) and pour it evenly into the prepared pans.
  5. Bake for 30-35 minutes, or until a toothpick comes out clean. Let cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  6. Once cooled, place one cake layer on a serving plate and spread softened strawberry ice cream over the top evenly.
  7. Carefully place the second cake layer on top and freeze for at least 2 hours, or until firm.
  8. To make the ganache, heat the heavy cream until just simmering. Pour over the chocolate chips, let sit for 5 minutes, then stir until melted and smooth.
  9. Pour the ganache over the assembled cake, allowing it to drip down the sides, then garnish with sliced fresh strawberries and chocolate shavings.
  10. Freeze again for about 30 minutes to set the ganache before serving.

Notes

For best flavor, use high-quality chocolate for the ganache. Store leftovers tightly covered in the freezer.
