A show-stopping dessert combining the delightful flavors of strawberries and chocolate, featuring rich chocolate cake, creamy strawberry ice cream, and luscious chocolate ganache.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1.5 quarts strawberry ice cream, softened
  • 1 cup heavy cream
  • 12 oz semi-sweet chocolate chips
  • Fresh strawberries, sliced
  • Chocolate shavings

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients, and mix until well combined.
  4. Stir in boiling water until the batter is smooth and thin.
  5. Pour batter evenly into the prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. Once cooled, place one cake layer on a serving plate and spread softened strawberry ice cream over it.
  8. Top with the second cake layer and freeze for at least 2 hours, until the ice cream is firm.
  9. For the ganache, heat heavy cream until simmering, remove from heat, and pour over chocolate chips. Let sit for 5 minutes, then stir until smooth.
  10. Pour ganache over the cake, allowing it to drip down the sides, and garnish with strawberry slices and chocolate shavings.
  11. Freeze for another 30 minutes to set the ganache.
  12. Slice and serve with extra strawberries or whipped cream.

Notes

Make sure your ice cream is soft enough to spread. You can use a cake leveler for even layers. Let the ganache cool slightly before pouring.
