Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 1 cup pistachio paste
  • 1/2 cup shelled pistachios, roughly chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of the springform pan and bake for 10 minutes. Set aside to cool.
  3. In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, beating well after each. Mix in heavy cream, vanilla extract, and pistachio paste until fully combined.
  4. Pour cheesecake batter over cooled crust and smooth the top. Bake for 55-60 minutes, until the center is just set but slightly jiggly.
  5. Turn off the oven and let cheesecake cool inside for 1 hour, with the door slightly open. Refrigerate for at least 4 hours or overnight.
  6. Before serving, sprinkle chopped pistachios on top for garnish.

For best results, make a day ahead. Ensure the cream cheese is at room temperature for easier mixing.
