Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 1 cup pistachio paste
  • 1/2 cup shelled pistachios, roughly chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and set it aside.
  2. In a medium bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture evenly into the bottom of the springform pan. Bake the crust for 10 minutes.
  3. In a large bowl, beat the softened cream cheese and 1 cup sugar until smooth. Add the eggs one at a time, beating well after each. Mix in the heavy cream, vanilla extract, and pistachio paste.
  4. Pour the cheesecake batter over the cooled crust. Bake for 55-60 minutes, until the center is set but jiggly.
  5. Turn off the oven, cool the cheesecake inside for 1 hour, then refrigerate for at least 4 hours.
  6. Before serving, sprinkle chopped pistachios on top.

Notes

Use room temperature cream cheese for a smoother filling. Allow the cheesecake to cool slowly in the oven to avoid cracks.
