Description

Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/3 cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups heavy cream
  • 1/2 cup sweetened shredded coconut
  • 1/2 cup chopped pecans
  • 1/2 cup chocolate chips, melted
  • Chocolate ganache (store-bought or homemade)
  • Whipped cream
  • Additional chocolate cookies, pecans, and coconut for garnish

Instructions

  1. In a medium bowl, combine the chocolate cookie crumbs and melted butter. Mix until the crumbs are evenly coated.
  2. Press the mixture into the bottom of a springform pan to form an even crust. Set aside.
  3. In a large mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  4. In a separate bowl, whip the heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  6. Stir in the shredded coconut and chopped pecans.
  7. Pour the filling over the prepared crust, spreading it evenly with a spatula.
  8. Drizzle the melted chocolate over the top of the cheesecake filling.
  9. Use a knife or toothpick to gently swirl the chocolate into the filling for a marbled effect.
  10. Refrigerate the cheesecake for at least 240 minutes, or until it is fully set.
  11. Before serving, top the cheesecake with chocolate ganache, whipped cream, and additional chocolate cookies, pecans, and coconut if desired.

Notes

For a firmer cheesecake, refrigerate overnight. Use a combination of milk and dark chocolate for the ganache for a richer flavor.
