- 1 1/2 cups chocolate cookie crumbs
- 1/3 cup melted butter
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 1 1/2 cups heavy cream
- 1/2 cup sweetened shredded coconut
- 1/2 cup chopped pecans
- 1/2 cup chocolate chips, melted
- Chocolate ganache (store-bought or homemade)
- Whipped cream
- Additional chocolate cookies, pecans, and coconut for garnish
Instructions
- In a medium bowl, combine the chocolate cookie crumbs and melted butter. Mix until the crumbs are evenly coated.
- Press the mixture into the bottom of a springform pan to form an even crust. Set aside.
- In a large mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Stir in the shredded coconut and chopped pecans.
- Pour the filling over the prepared crust, spreading it evenly with a spatula.
- Drizzle the melted chocolate over the top of the cheesecake filling.
- Use a knife or toothpick to gently swirl the chocolate into the filling for a marbled effect.
- Refrigerate the cheesecake for at least 240 minutes, or until it is fully set.
- Before serving, top the cheesecake with chocolate ganache, whipped cream, and additional chocolate cookies, pecans, and coconut if desired.
Notes
For a firmer cheesecake, refrigerate overnight. Use a combination of milk and dark chocolate for the ganache for a richer flavor.
