- 1 box (about 200g) brownie mix (plus ingredients required, typically egg, water, and oil)
- 1/2 cup (115g) unsalted butter, melted
- 1/4 cup (50g) granulated sugar (optional)
- 8 oz (225g) cream cheese, softened
- 1 cup (240ml) heavy cream
- 1/2 cup (100g) powdered sugar
- 1 tsp vanilla extract
- 2 tbsp cocoa powder
- 1/4 cup (60ml) sour cream
- 1/2 cup (90g) semi-sweet chocolate chips
- 1/4 cup (60ml) heavy cream (for ganache)
- Chocolate shavings or cocoa powder (for garnish)
- Whipped cream (for garnish)
Instructions
- Preheat the oven according to the directions on the brownie mix box.
- Prepare the brownie batter based on the instructions, incorporating the melted butter and sugar if you choose to use it.
- Pour the brownie batter into a greased or parchment-lined 9-inch round springform pan.
- Bake the brownies for the indicated time or until a toothpick inserted into the center comes out clean. Allow them to cool completely.
- In a mixing bowl, beat the softened cream cheese until smooth. Then add the powdered sugar, vanilla extract, and cocoa powder.
- In another bowl, whip the heavy cream until stiff peaks form, and then fold this into the cream cheese mixture. Add sour cream and combine until fully incorporated.
- Spoon the no-bake cheesecake mixture over the cooled brownie layer and smooth the top. Refrigerate for at least 4 hours.
- For the ganache, heat the heavy cream in a saucepan until it simmers. Remove from heat and pour it over the chocolate chips. Let it sit, then stir until smooth. Pour the ganache over the cheesecake layer once cooled.
- Garnish with chocolate shavings or whipped cream, slice, and serve.
Notes
Make sure the cream cheese is softened to room temperature for easy mixing. For a richer flavor, you can use dark chocolate chips in the ganache.
