Ingredients

  • 1 box (about 200g) brownie mix (plus ingredients required, typically egg, water, and oil)
  • 1/2 cup (115g) unsalted butter, melted
  • 1/4 cup (50g) granulated sugar (optional)
  • 8 oz (225g) cream cheese, softened
  • 1 cup (240ml) heavy cream
  • 1/2 cup (100g) powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp cocoa powder
  • 1/4 cup (60ml) sour cream
  • 1/2 cup (90g) semi-sweet chocolate chips
  • 1/4 cup (60ml) heavy cream (for ganache)
  • Chocolate shavings or cocoa powder (for garnish)
  • Whipped cream (for garnish)

Instructions

  1. Preheat the oven according to the directions on the brownie mix box.
  2. Prepare the brownie batter based on the instructions, incorporating the melted butter and sugar if you choose to use it.
  3. Pour the brownie batter into a greased or parchment-lined 9-inch round springform pan.
  4. Bake the brownies for the indicated time or until a toothpick inserted into the center comes out clean. Allow them to cool completely.
  5. In a mixing bowl, beat the softened cream cheese until smooth. Then add the powdered sugar, vanilla extract, and cocoa powder.
  6. In another bowl, whip the heavy cream until stiff peaks form, and then fold this into the cream cheese mixture. Add sour cream and combine until fully incorporated.
  7. Spoon the no-bake cheesecake mixture over the cooled brownie layer and smooth the top. Refrigerate for at least 4 hours.
  8. For the ganache, heat the heavy cream in a saucepan until it simmers. Remove from heat and pour it over the chocolate chips. Let it sit, then stir until smooth. Pour the ganache over the cheesecake layer once cooled.
  9. Garnish with chocolate shavings or whipped cream, slice, and serve.

Notes

Make sure the cream cheese is softened to room temperature for easy mixing. For a richer flavor, you can use dark chocolate chips in the ganache.
