Ingredients

  • 1/2 cup cocoa powder
  • 1 cup sugar
  • 1/2 cup butter
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup mint chocolate chips
  • 8 oz cream cheese
  • 1/2 cup powdered sugar
  • 1 tsp mint extract
  • Green food coloring
  • 1/2 cup chocolate ganache
  • Fresh mint leaves for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the flour, cocoa powder, and sugar until well combined.
  3. Add the butter, eggs, and vanilla extract to the dry ingredients, and stir until the mixture is smooth.
  4. Fold in the mint chocolate chips gently, then pour the batter into a greased pan.
  5. Bake in the oven for 25 minutes. Once done, let the cake cool.
  6. In another bowl, beat the cream cheese, powdered sugar, mint extract, and a few drops of green food coloring until creamy and smooth.
  7. Once the cake is cool, spread the mint mixture evenly over the top.
  8. Drizzle the cake with chocolate ganache and garnish with fresh mint leaves.

Notes

Make sure your butter is softened for easier mixing. Do not overmix the batter to prevent densification.
