- 1 cup flour
- 1/2 cup cocoa powder
- 1 cup sugar
- 1/2 cup butter
- 2 eggs
- 1 tsp vanilla extract
- 1 cup mint chocolate chips
- 8 oz cream cheese
- 1/2 cup powdered sugar
- 1 tsp mint extract
- Green food coloring
- 1/2 cup chocolate ganache
- Fresh mint leaves for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the flour, cocoa powder, and sugar until well combined.
- Add the butter, eggs, and vanilla extract to the dry ingredients, and stir until the mixture is smooth.
- Fold in the mint chocolate chips gently, then pour the batter into a greased pan.
- Bake in the oven for 25 minutes. Once done, let the cake cool.
- In another bowl, beat the cream cheese, powdered sugar, mint extract, and a few drops of green food coloring until creamy and smooth.
- Once the cake is cool, spread the mint mixture evenly over the top.
- Drizzle the cake with chocolate ganache and garnish with fresh mint leaves.
Notes
Make sure your butter is softened for easier mixing. Do not overmix the batter to prevent densification.
