Ingredients

- 1 cup flour
- 1/2 cup cocoa powder
- 1 cup sugar
- 1/2 cup butter
- 2 eggs
- 1 tsp vanilla extract
- 1 cup mint chocolate chips
- 8 oz cream cheese
- 1/2 cup powdered sugar
- 1 tsp mint extract
- Green food coloring
- 1/2 cup chocolate ganache
- Fresh mint leaves for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the flour, cocoa powder, and sugar.
- Add the butter, eggs, and vanilla extract to the dry ingredients. Stir until smooth.
- Gently fold in the mint chocolate chips and then pour the batter into a greased pan.
- Bake in the preheated oven for about 25 minutes. Once done, let the cake cool completely.
- In another bowl, beat the cream cheese, powdered sugar, mint extract, and a few drops of green food coloring until smooth and creamy.
- Spread the mint cream cheese mixture evenly over the cooled cake.
- Drizzle chocolate ganache over the top and garnish with fresh mint leaves.
Notes
For best results, ensure butter is at room temperature and cream cheese is well beaten to avoid lumps. Adjust mint extract for desired mint flavor.
