Description

A rich and moist chocolate cake made with cocoa powder and brewed coffee, perfect for any occasion.


Ingredients

  • 1 3/4 cups (220g) all-purpose flour
  • 3/4 cup (65g) unsweetened cocoa powder
  • 2 cups (400g) granulated sugar
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup (240ml) buttermilk
  • 1 cup (240ml) hot brewed coffee
  • 1/2 cup (120ml) vegetable oil
  • 2 teaspoons pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. In a large bowl, sift together the flour, cocoa powder, sugar, baking soda, baking powder, and salt.
  3. In another bowl, whisk the eggs, buttermilk, coffee, vegetable oil, and vanilla until smooth.
  4. Gradually combine the wet ingredients into the dry mixture. Mix on medium speed until the batter is smooth and lump-free.
  5. Divide the batter evenly into the prepared pans. Smooth the tops with a spatula.
  6. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cakes cool in their pans for 10 minutes before transferring them to a wire rack to cool completely.
  8. Frost with your favorite chocolate ganache, buttercream, or whipped cream frosting.

Notes

Store in an airtight container at room temperature for 3-4 days or refrigerate for up to a week. You can also freeze the cake for up to 3 months.
