Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup mini chocolate chips

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the texture resembles wet sand. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in sour cream and vanilla extract.
  4. In another bowl, beat softened butter, brown sugar, and granulated sugar until fluffy. Mix in vanilla extract and milk. Add flour and salt, stirring until incorporated. Fold in mini chocolate chips.
  5. Pour half of the cheesecake batter over the crust. Drop spoonfuls of cookie dough evenly across the surface. Pour remaining cheesecake batter on top and swirl with a knife.
  6. Bake for 50-55 minutes, until the center is almost set. Allow to cool, then refrigerate for at least 4 hours before serving.

Notes

Make sure cream cheese is softened for a smoother batter. Enjoy with whipped cream or extra chocolate chips.
