- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 tablespoons milk
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1 cup mini chocolate chips
Instructions
- Preheat your oven to 325°F (163°C).
- In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the texture resembles wet sand. Press the mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in sour cream and vanilla extract.
- In another bowl, beat softened butter, brown sugar, and granulated sugar until fluffy. Mix in vanilla extract and milk. Add flour and salt, stirring until incorporated. Fold in mini chocolate chips.
- Pour half of the cheesecake batter over the crust. Drop spoonfuls of cookie dough evenly across the surface. Pour remaining cheesecake batter on top and swirl with a knife.
- Bake for 50-55 minutes, until the center is almost set. Allow to cool, then refrigerate for at least 4 hours before serving.
Notes
Make sure cream cheese is softened for a smoother batter. Enjoy with whipped cream or extra chocolate chips.
