Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup melted butter
  • 16 oz cream cheese (softened)
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup melted dark chocolate
  • 1/2 cup strawberry puree (blended fresh strawberries)
  • 2 tbsp sugar
  • 1 tsp cornstarch (mixed with 1 tbsp water)

Instructions

  1. Prepare the Crust: Mix chocolate cookie crumbs with melted butter. Press into a springform pan and chill in the refrigerator.
  2. Make the Strawberry Swirl: In a saucepan, heat strawberry puree with sugar, stir in cornstarch mixture, and simmer until thickened. Let cool.
  3. Prepare the Cheesecake Filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Mix in vanilla, sour cream, and melted chocolate.
  4. Assemble: Pour cheesecake filling over chilled crust. Drop spoonfuls of cooled strawberry sauce on top and swirl gently with a knife.
  5. Bake: Preheat oven to 325°F (163°C). Bake for 45-50 minutes until set but slightly jiggly in the center.
  6. Cool & Chill: Let cool completely, then refrigerate for at least 4 hours before serving.

Notes
