Description

A rich chocolate cheesecake with a sweet strawberry swirl, perfect for any occasion.


Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup melted butter
  • 16 oz cream cheese (softened)
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup melted dark chocolate
  • 1/2 cup strawberry puree (blended fresh strawberries)
  • 2 tbsp sugar
  • 1 tsp cornstarch (mixed with 1 tbsp water)

Instructions

  1. Prepare the crust by mixing chocolate cookie crumbs with melted butter. Press this mixture into the bottom of a springform pan and chill.
  2. Make the strawberry swirl by heating the strawberry puree with sugar, adding the cornstarch mixture, and simmering until thickened. Let it cool.
  3. Prepare the cheesecake filling by beating cream cheese and sugar together until smooth. Add eggs one at a time, then mix in vanilla, sour cream, and melted chocolate.
  4. Assemble the cheesecake by pouring the filling over the crust and dropping spoonfuls of the strawberry sauce on top. Swirl gently with a knife.
  5. Preheat the oven to 325°F (163°C) and bake the cheesecake for 45-50 minutes until set but slightly jiggles in the center.
  6. Cool completely, then refrigerate for at least 4 hours before serving.

Notes

Garnish with fresh strawberries or whipped cream. Store leftovers in the refrigerator for up to 5 days.
