- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup melted butter
- 16 oz cream cheese (softened)
- 3/4 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1/2 cup melted dark chocolate
- 1/2 cup strawberry puree (blended fresh strawberries)
- 2 tbsp sugar
- 1 tsp cornstarch (mixed with 1 tbsp water)
Instructions
- Prepare the Crust: Mix chocolate cookie crumbs with melted butter. Press into the bottom of a springform pan and chill.
- Make the Strawberry Swirl: In a saucepan, heat strawberry puree with sugar. Stir in cornstarch mixture and simmer until thickened. Let cool.
- Prepare the Cheesecake Filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla, sour cream, and melted chocolate.
- Assemble: Pour cheesecake filling over the crust. Drop spoonfuls of strawberry sauce on top and swirl gently with a knife.
- Bake: Preheat oven to 325°F (163°C). Bake for 45-50 minutes until set but slightly jiggly in the center.
- Cool & Chill: Let cool completely, then refrigerate for at least 4 hours before serving.
Notes
Serve chilled, garnished with whipped cream, fresh strawberries, or chocolate shavings. Store covered in the refrigerator for up to 5 days.
