- 2 cups all-purpose flour
- 1 3/4 cups sugar
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup heavy cream
- 8 ounces dark chocolate, chopped
- Fresh strawberries for topping
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add in the eggs, milk, vegetable oil, and vanilla extract. Beat the mixture on medium speed for 2 minutes until well combined.
- Carefully stir in the boiling water. The batter will be thin, but that’s okay!
- Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes, or until a toothpick comes out clean from the center.
- Let the cakes cool in the pans for about 10 minutes before removing them from the pans to cool completely on a wire rack.
- To make the ganache, heat the heavy cream in a small saucepan until it simmers. Pour it over the chopped dark chocolate and stir until the chocolate is completely melted and smooth.
- Let the ganache cool slightly, then spread it over the cooled cakes.
- Top the finished cake with fresh strawberries for that perfect touch.
Notes
For extra flavor, consider adding mini chocolate chips to the batter or a layer of strawberry jam between the cake layers.
