A rich and moist chocolate cake layered with creamy frosting and fresh strawberries, perfect for any celebration.
Ingredients

- 2 cups all-purpose flour
- 1 3/4 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 1/2 cups heavy cream
- 1 cup cream cheese
- 1/2 cup powdered sugar
- 1 cup dark chocolate ganache
- Fresh strawberries
- Mint leaves
Instructions
- Preheat your oven to 350°F (175°C) and grease two 8-inch cake pans.
- In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients and beat until everything is well combined.
- Stir in the boiling water. The batter will be thin, so don’t worry!
- Pour the batter evenly into the prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
- Allow the cakes to cool completely.
- While the cakes are cooling, whip the heavy cream, cream cheese, and powdered sugar to make a fluffy frosting.
- Once the cakes are cool, layer them with the frosting in between the two layers.
- Pour the dark chocolate ganache over the top of the cake and decorate with fresh strawberries and mint leaves.
- Chill the cake for at least 1 hour before serving.
Notes
Store in an airtight container in the refrigerator for up to 3 days. Can freeze individual slices for up to a month.
