Description

A rich chocolate cake topped with smooth ganache and fresh strawberries, perfect for any celebration.


Ingredients

  • 2 cups all-purpose flour
  • 1 3/4 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup heavy cream
  • 8 ounces dark chocolate, chopped
  • Fresh strawberries for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract. Beat the mixture on medium speed for about 2 minutes until well combined.
  4. Carefully stir in the boiling water. The batter will be thin, but that’s okay!
  5. Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cakes to cool in the pans for about 10 minutes, then remove them from the pans and let them cool completely on a wire rack.
  7. For the ganache, heat the heavy cream in a small pot until it begins to simmer. Pour the hot cream over the chopped dark chocolate and stir until smooth.
  8. Let the ganache cool slightly before spreading it over the cooled cake layers.
  9. Top the cake with fresh strawberries for a beautiful finish.

Notes

Serve with whipped cream or vanilla ice cream for an extra treat. Store any leftovers in an airtight container for up to three days.
