Ingredients

  • 3/4 cup all-purpose gluten-free flour
  • 1/2 teaspoon xanthan gum
  • 1/4 cup cornstarch
  • 1 teaspoon kosher salt
  • 3/4 cup Dutch-processed cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. Melt the chopped dark chocolate until smooth and let it cool slightly.
  3. In a bowl, whisk together the gluten-free flour, xanthan gum, cornstarch, kosher salt, and cocoa powder.
  4. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  5. Beat in the eggs one at a time, then add the vanilla and melted chocolate. Mix until fully combined.
  6. Gradually add the dry mixture to the wet mixture, alternating with the milk. Mix until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
