- 3/4 cup all-purpose gluten-free flour
- 1/2 teaspoon xanthan gum
- 1/4 cup cornstarch
- 1 teaspoon kosher salt
- 3/4 cup Dutch-processed cocoa powder
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- Melt the chopped dark chocolate until smooth and let it cool slightly.
- In a bowl, whisk together the gluten-free flour, xanthan gum, cornstarch, kosher salt, and cocoa powder.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then add the vanilla and melted chocolate. Mix until fully combined.
- Gradually add the dry mixture to the wet mixture, alternating with the milk. Mix until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
Notes
Serve plain or with whipped cream, fresh fruit, or chocolate sauce. Store in an airtight container for up to 3 days.
