- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
- Pinch of salt
- 1 cup smooth peanut butter
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup heavy cream
- 8 oz semisweet or bittersweet chocolate, chopped
- 1/2 cup heavy cream
- 2 tbsp unsalted butter
- Chopped peanuts (optional)
- Whipped cream (optional)
- Chocolate shavings (optional)
Instructions
- Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, sugar, melted butter, and a pinch of salt. Mix until the crumbs are evenly coated. Press the mixture into the bottom and up the sides of a 9-inch pie pan. Bake for 8-10 minutes until golden brown. Remove and let it cool completely.
- In a large bowl, beat together the peanut butter, cream cheese, powdered sugar, and vanilla extract until smooth. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the peanut butter mixture until combined. Spoon this filling into the cooled graham cracker crust and spread it evenly. Refrigerate while you prepare the ganache.
- In a small saucepan, heat the heavy cream over medium heat until it simmers. Remove from heat and pour the hot cream over the chopped chocolate in a heatproof bowl. Let it sit for 3-4 minutes, then stir until smooth. Add the butter and stir until fully mixed. Allow the ganache to cool slightly before pouring it over the peanut butter filling. Spread it evenly.
- Place the pie in the refrigerator and chill for at least 4 hours or overnight. The pie should be firm and set.
- Before serving, garnish with chopped peanuts, whipped cream, or chocolate shavings if you wish. Slice, serve, and enjoy!
Notes
Make sure your cream cheese is softened for easy mixing. Use high-quality chocolate for a richer taste in the ganache.
