  • 1/2 cup heavy whipping cream (for ganache)

Instructions

  1. Prepare the crust: In a bowl, combine the chocolate cookie crumbs and melted butter. Press this mixture into a 9-inch pie pan and chill it in the refrigerator for 20-30 minutes.
  2. Make the peanut butter filling: In another bowl, beat the softened cream cheese, creamy peanut butter, powdered sugar, and vanilla extract until smooth. Whip 1 1/2 cups of heavy cream in a separate bowl until stiff peaks form. Gently fold the whipped cream into the peanut butter mixture until combined. Spoon the filling into the chilled crust and refrigerate for at least 2 hours to set.
  3. Prepare the chocolate ganache: Heat 1/2 cup of heavy cream in a saucepan until it simmers. Remove from heat and pour it over the semi-sweet chocolate chips. Let it sit for a minute, then stir until smooth. Cool the ganache slightly, and then pour it over the peanut butter filling. Allow it to set in the refrigerator for 1 hour.
  4. Garnish: Once the ganache has set, top the pie with chopped peanuts, mini peanut butter cups, and chocolate shavings. Serve with extra whipped cream or melted peanut butter, if desired.

Notes

Make sure the cream cheese is softened for easy mixing. For an extra crunch, toast the chopped peanuts before adding them as a garnish. If you want a richer chocolate crust, you can use chocolate graham crackers instead of regular chocolate cookies.
