A rich and moist chocolate layer cake topped with a luscious ganache, perfect for any celebration.

- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup boiling water
- 2 cups heavy whipping cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract (for filling)
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream (for ganache)
- Chopped hazelnuts (for decoration)
- Vanilla ice cream (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the milk, oil, eggs, and vanilla extract. Beat until smooth.
- Gradually add the boiling water to the batter, mixing until combined. The batter will be thin.
- Divide the batter evenly between the two prepared pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow the cakes to cool completely.
- For the filling, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- To assemble the cake, place one cake layer on a plate, spread a thick layer of whipped cream, then top it with the second cake layer. Cover the cake with more whipped cream if desired.
- For the ganache, heat the heavy cream until simmering. Pour it over the chocolate chips and stir until smooth. Drizzle the ganache over the cake.
- Decorate the cake with chopped hazelnuts and add a scoop of vanilla ice cream on top if you like.
Notes
Store leftover cake in an airtight container in the refrigerator for up to 3 days. Can freeze wrapped tightly in plastic wrap.
