Description

A rich and moist chocolate layer cake topped with a luscious ganache, perfect for any celebration.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract (for filling)
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream (for ganache)
  • Chopped hazelnuts (for decoration)
  • Vanilla ice cream (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the milk, oil, eggs, and vanilla extract. Beat until smooth.
  4. Gradually add the boiling water to the batter, mixing until combined. The batter will be thin.
  5. Divide the batter evenly between the two prepared pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow the cakes to cool completely.
  6. For the filling, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  7. To assemble the cake, place one cake layer on a plate, spread a thick layer of whipped cream, then top it with the second cake layer. Cover the cake with more whipped cream if desired.
  8. For the ganache, heat the heavy cream until simmering. Pour it over the chocolate chips and stir until smooth. Drizzle the ganache over the cake.
  9. Decorate the cake with chopped hazelnuts and add a scoop of vanilla ice cream on top if you like.

Notes

Store leftover cake in an airtight container in the refrigerator for up to 3 days. Can freeze wrapped tightly in plastic wrap.
