Description

A rich chocolate layer cake with creamy whipped filling, perfect for any celebration.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • Chopped hazelnuts
  • Vanilla ice cream (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Stir in the milk, vegetable oil, eggs, and vanilla extract. Beat until smooth.
  4. Slowly add the boiling water to the mix; the batter will be thin.
  5. Divide the batter evenly between the prepared pans. Bake for 30-35 minutes, or until a toothpick comes out clean.
  6. Let the cakes cool completely.
  7. For the filling, whip the heavy cream, powdered sugar, and vanilla until stiff peaks form.
  8. Assemble the cake by placing one layer on a plate, spreading whipped cream on top, and adding the second layer.
  9. For the ganache, heat heavy cream until simmering, pour over chocolate chips, and stir until smooth. Drizzle over the cake.
  10. Decorate with chopped hazelnuts and serve with a scoop of vanilla ice cream, if desired.

Notes

Use room temperature ingredients for the best batter consistency. Don’t skip the boiling water for moist cake.
