Description

This rich and moist chocolate layer cake is perfect for any special occasion, topped with smooth chocolate ganache and fluffy whipped cream.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup cocoa powder
  • 1 1/2 cups sugar
  • 3/4 cup butter
  • 3 eggs
  • 1 cup buttermilk
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 cup heavy cream
  • 1/2 cup chocolate ganache
  • 1 tsp vanilla extract
  • 1 cup chopped dark chocolate

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two cake pans.
  2. In a bowl, mix together the flour, cocoa powder, baking powder, and baking soda.
  3. In another bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix until smooth.
  5. Divide the batter evenly between the two greased pans and bake for 25-30 minutes. Allow the cakes to cool completely.
  6. Whip the heavy cream with the vanilla extract until soft peaks form. Spread this whipped cream between the cooled cake layers.
  7. Pour the chocolate ganache over the top and sides of the cake, smoothing it out with a spatula.
  8. Decorate with the chopped dark chocolate and refrigerate the cake for 1 hour to set.

Notes

Store any leftover cake in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze individual slices wrapped tightly in plastic wrap for about a month.
