A rich cake combining layers of chocolate, gooey caramel, and crunchy pecans, perfect for any occasion.

- 2 cups all-purpose flour
- 1 1/2 cups sugar
- 3/4 cup cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 cup caramel sauce
- 1 cup chopped pecans
- 1 cup white chocolate chips
- 1/2 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, mix together the flour, sugar, cocoa, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla to the dry ingredients. Beat the mixture until smooth.
- Carefully stir in the boiling water (the batter will be thin).
- Divide the batter evenly between the two prepared pans and bake for 30-35 minutes, or until a toothpick comes out clean.
- Cool the cakes in the pans for 10 minutes, then transfer them to wire racks to cool completely.
- To make the ganache, heat the heavy cream and pour it over the white chocolate chips. Let it cool until it thickens.
- Once the first cake layer is cool, spread caramel sauce over it and sprinkle with chopped pecans.
- Place the second layer on top and frost the entire cake with the ganache. Drizzle more caramel sauce on top.
- Finally, decorate with any remaining pecans and white chocolate chips.
Notes
Serve with vanilla ice cream or whipped cream for an extra treat! Ensure ingredients are at room temperature for best results.
