Description

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup fresh blackberries
  • 1 cup chocolate ganache
  • 1/2 cup whipped cream
  • Chocolate truffles and shards for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed until everything is well combined.
  4. Carefully stir in the boiling water; the batter will be thin.
  5. Divide the batter evenly between the prepared pans.
  6. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
  8. Once cool, spread a layer of chocolate ganache on top of one cake layer. Add half of the blackberries and top with whipped cream.
  9. Place the second cake layer on top and cover with the remaining ganache and whipped cream.
  10. Decorate with the rest of the blackberries, chocolate truffles, and chocolate shards.
  11. Chill the cake for 1 hour before serving.

Notes

Make sure ingredients are at room temperature for better mixing. For a more intense chocolate flavor, use high-quality cocoa powder and chocolate ganache.
