A heavenly mix of rich chocolate and sweet blackberries, perfect for special occasions or cozy afternoons.

- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 1/2 cups granulated sugar
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup fresh blackberries
- 1 cup chocolate ganache
- 1/2 cup whipped cream
- Chocolate truffles and shards for decoration
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Beat on medium speed until well mixed.
- Carefully stir in the boiling water. The batter will be thin, which is perfectly normal!
- Divide the batter evenly between the prepared pans.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
- Once cooled, spread a layer of chocolate ganache on one cake layer. Add half of the blackberries on top, followed by whipped cream.
- Place the second cake layer on top and cover it with the remaining ganache and whipped cream.
- Decorate with the rest of the blackberries, chocolate truffles, and chocolate shards.
- Chill the cake for 1 hour before serving.
Notes
Store leftover cake in an airtight container in the refrigerator for 3-4 days. Can also be frozen for up to 3 months.
