Decadent Chocolate Blackberry Cake Delight

Description

A heavenly mix of rich chocolate and sweet blackberries, perfect for special occasions or cozy afternoons.


Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup fresh blackberries
  • 1 cup chocolate ganache
  • 1/2 cup whipped cream
  • Chocolate truffles and shards for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Beat on medium speed until well mixed.
  4. Carefully stir in the boiling water. The batter will be thin, which is perfectly normal!
  5. Divide the batter evenly between the prepared pans.
  6. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
  8. Once cooled, spread a layer of chocolate ganache on one cake layer. Add half of the blackberries on top, followed by whipped cream.
  9. Place the second cake layer on top and cover it with the remaining ganache and whipped cream.
  10. Decorate with the rest of the blackberries, chocolate truffles, and chocolate shards.
  11. Chill the cake for 1 hour before serving.

Notes

Store leftover cake in an airtight container in the refrigerator for 3-4 days. Can also be frozen for up to 3 months.
