- 15 full-size chocolate graham crackers
- 6 tablespoons unsalted butter, melted
- 8 oz semisweet chocolate, chopped
- 24 oz full-fat cream cheese, softened
- 1 cup granulated sugar
- 1/4 cup heavy cream
- 1/4 cup unsweetened cocoa powder
- 4 large eggs, at room temperature
- 1 cup semisweet chocolate chips
- 1/2 cup heavy cream
Instructions
- Preheat oven to 325°F (160°C). Process the graham crackers into fine crumbs and mix them with melted butter. Press this mixture into the bottom and halfway up the sides of a 9-inch springform pan. Bake for 10 minutes and let cool.
- Melt the chopped chocolate in the microwave. In a mixer, beat the cream cheese until smooth. Add the sugar, heavy cream, and cocoa powder, mixing until well combined. Add the eggs one at a time, and then gently fold in the melted chocolate.
- Pour the batter into the prepared crust and bake for 50 minutes. Cool the cheesecake in the oven with the door cracked, then refrigerate for at least 4 hours.
- Heat the cream until it starts to simmer. Pour it over the chocolate chips and let it sit for a moment. Stir until the mixture is smooth, cool slightly, then pour it over the chilled cheesecake.

For a richer flavor, use high-quality chocolate. Let the cheesecake cool in the oven to prevent cracks.
