- 1 cup dark chocolate, finely chopped
- 1 cup heavy cream
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries
- 2 tablespoons granulated sugar (for raspberry mousse)
- 1/2 cup heavy cream, whipped
- 1 teaspoon gelatin, dissolved in 1 tablespoon warm water
- 1/2 cup dark chocolate, finely chopped (for glaze)
- 1/4 cup heavy cream (for glaze)
- 2 tablespoons corn syrup
- Fresh raspberries (for garnish)
- Edible gold flakes (for garnish)
Instructions
- Melt the dark chocolate in a heatproof bowl over simmering water and let it cool slightly.
- Whip the heavy cream with sugar and vanilla until soft peaks form, then gently fold in the melted chocolate. Chill for 30 minutes.
- Puree the raspberries and strain to remove seeds. Heat puree with sugar until slightly thickened and stir in dissolved gelatin. Let it cool and fold in the whipped cream.
- Fill silicone dome molds halfway with dark chocolate mousse. Add raspberry mousse in the center and top with more chocolate mousse, smoothing the tops. Freeze for at least 4 hours.
- Heat cream and corn syrup until steaming, pour over chopped chocolate, and stir until smooth. Let it cool slightly.
- Unmold the frozen domes onto a wire rack and pour the mirror glaze over them, ensuring they are fully coated. Let the glaze set.
- Garnish with fresh raspberries and edible gold flakes before serving.
Notes
Make sure the dark chocolate is finely chopped to ensure even melting. Use fresh, ripe raspberries for best flavor.
