  • 1/2 cup brown sugar
  • 6 tablespoons butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup cocoa powder (preferably Hershey’s Special Dark)
  • 1/2 cup all-purpose flour
  • 1/8 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 cup chocolate chips
  • A few handfuls of pretzels
  • 3/4 cup sugar (for caramel)
  • 3 tablespoons corn syrup
  • 4 tablespoons butter (for caramel)
  • 3 tablespoons heavy cream
  • 1/4 teaspoon kosher salt (for caramel)
  • 1/4 teaspoon vanilla extract (for caramel)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch square pan. Lining it with parchment paper helps to lift the brownies out easily.
  2. In a microwave-safe bowl, combine the white sugar, brown sugar, and butter. Microwave until the butter melts, then allow to cool slightly.
  3. Stir in the eggs and vanilla until well combined.
  4. In another bowl, mix together the cocoa powder, all-purpose flour, salt, and baking soda. Gradually add this mixture to the butter mixture, stirring until smooth.
  5. Fold in the chocolate chips until evenly distributed.
  6. Pour the batter into the prepared pan and bake for 30 minutes, or until a toothpick inserted in the center comes out clean.
  7. For the caramel: In a saucepan, combine the sugar and corn syrup. Cook over medium heat, stirring occasionally.
  8. Watch closely as the mixture melts; it will turn from honey-colored to an ambery caramel color.
  9. Once it reaches the caramel color, add the butter and stir until the bubbling subsides.
  10. Add the heavy cream, stirring until well combined and bubbling subsides. Finally, mix in the salt and vanilla. Set aside to cool slightly.
  11. Once the caramel has cooled enough to thicken but is still pourable, pour it over the baked brownies.
  12. If the caramel has thickened too much, warm it slightly until pourable again.
  13. Top the brownies with a generous handful of pretzels and sprinkle with sea salt if desired.
  14. Allow to cool completely before cutting into squares.
