- 1/2 cup brown sugar
- 6 tablespoons butter
- 2 large eggs

- 1/4 teaspoon baking soda
- 1 cup chocolate chips
- A few handfuls of pretzels

- 3 tablespoons corn syrup
- 4 tablespoons butter (for caramel)
- 3 tablespoons heavy cream
- 1/4 teaspoon kosher salt (for caramel)
- 1/4 teaspoon vanilla extract (for caramel)
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8 inch square pan. Lining it with parchment paper helps to lift the brownies out easily.
- In a microwave-safe bowl, combine the white sugar, brown sugar, and butter. Microwave until the butter melts, then allow to cool slightly.
- Stir in the eggs and vanilla until well combined.
- In another bowl, mix together the cocoa powder, all-purpose flour, salt, and baking soda. Gradually add this mixture to the butter mixture, stirring until smooth.
- Fold in the chocolate chips until evenly distributed.
- Pour the batter into the prepared pan and bake for 30 minutes, or until a toothpick inserted in the center comes out clean.
- For the caramel: In a saucepan, combine the sugar and corn syrup. Cook over medium heat, stirring occasionally.
- Watch closely as the mixture melts; it will turn from honey-colored to an ambery caramel color.
- Once it reaches the caramel color, add the butter and stir until the bubbling subsides.
- Add the heavy cream, stirring until well combined and bubbling subsides. Finally, mix in the salt and vanilla. Set aside to cool slightly.
- Once the caramel has cooled enough to thicken but is still pourable, pour it over the baked brownies.
- If the caramel has thickened too much, warm it slightly until pourable again.
- Top the brownies with a generous handful of pretzels and sprinkle with sea salt if desired.
- Allow to cool completely before cutting into squares.
