Delightful condensed milk cupcakes with a light and fluffy texture, perfect for any occasion.
Ingredients

- 50 ml of oil
- 50 g (1/2 cup) of flour
- 3 egg yolks
- 1 whole egg
- 30 ml of condensed milk
- 3 egg whites
- 35 g (1/3 cup) of sugar
- 1/2 teaspoon lime juice
Instructions
- Preheat the oven to 150 °C (300 °F) and prepare a mold for cupcakes with paper capsules.
- In a bowl, mix the oil, sifted flour, and condensed milk. Add the egg yolks and the whole egg, beating until you get a homogeneous mixture.
- In another bowl, beat the egg whites with the lime juice until they begin to foam. Gradually add the sugar, beating until you get firm peaks.
- Gently incorporate the meringue into the previous mixture with enveloping movements. Pour into the cupcake molds, filling them up to 3/4 of their capacity.
- Bake for 25-30 minutes until golden and a stick comes out clean.
- Let cool completely before unmolding. Enjoy these spongy cupcakes alone or with a touch of glaze!
Notes
For added flavor, consider adding a teaspoon of vanilla extract to the batter. Store in an airtight container to keep fresh.
