Cubanelle & Veal Bolognese Penne

Description

A hearty pasta dish combining tender ground veal with sweet cubanelle peppers in a rich tomato sauce.


Ingredients

  • 1 lb ground veal
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cubanelle peppers, finely diced
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 1 tbsp tomato paste
  • 1 tsp dried oregano
  • Salt & pepper to taste
  • Fresh thyme and basil for garnish
  • 12 oz penne pasta, cooked al dente
  • Grated parmesan (optional)

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the chopped onion and diced cubanelle peppers. Sauté until soft.
  3. Add the ground veal to the skillet and cook until browned.
  4. Stir in the minced garlic and cook for one more minute.
  5. Add the crushed tomatoes, tomato paste, dried oregano, salt, and pepper.
  6. Let this mixture simmer for 20-25 minutes until it becomes thick.
  7. Toss the cooked penne with the veal sauce until well coated.
  8. Serve hot, garnished with fresh basil and thyme.

Notes

Add crushed red pepper flakes for a bit of spice, and adjust salt and pepper to taste before serving.
