Description
A hearty pasta dish combining tender ground veal with sweet cubanelle peppers in a rich tomato sauce.
Ingredients

- 1 lb ground veal
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cubanelle peppers, finely diced
- 3 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 1 tbsp tomato paste
- 1 tsp dried oregano
- Salt & pepper to taste
- Fresh thyme and basil for garnish
- 12 oz penne pasta, cooked al dente
- Grated parmesan (optional)
Instructions
- Heat the olive oil in a skillet over medium heat.
- Add the chopped onion and diced cubanelle peppers. Sauté until soft.
- Add the ground veal to the skillet and cook until browned.
- Stir in the minced garlic and cook for one more minute.
- Add the crushed tomatoes, tomato paste, dried oregano, salt, and pepper.
- Let this mixture simmer for 20-25 minutes until it becomes thick.
- Toss the cooked penne with the veal sauce until well coated.
- Serve hot, garnished with fresh basil and thyme.
Notes
Add crushed red pepper flakes for a bit of spice, and adjust salt and pepper to taste before serving.
