- 1 1/2 lbs ground beef
- 1 cup seasoned breadcrumbs
- 1 packet (1 oz) onion soup mix
- 2 large eggs
- 1/2 cup milk
- 1 tbsp Worcestershire sauce
- 2 cups caramelized onions (about 2 large onions)
- 1 cup shredded Swiss cheese (plus more for topping)
- 1 tbsp chopped parsley (for garnish)
Instructions
- In a large bowl, combine ground beef, breadcrumbs, onion soup mix, eggs, milk, and Worcestershire sauce. Mix until just combined—don’t overwork it!
- Shape the mixture into a loaf and place it in the crockpot. Top it with half the caramelized onions.
- Cover and cook on low for 6–7 hours or high for 3–4 hours.
- During the last 15 minutes, top with the remaining caramelized onions and shredded Swiss cheese. Cover until the cheese is melted.
- Slice, garnish with chopped parsley, and enjoy!
Notes
For best results, do not overmix the meatloaf mixture. You can try adding garlic powder or herbs for more flavor.
