Ingredients

  • 1 1/2 lbs ground beef
  • 1 cup seasoned breadcrumbs
  • 1 packet (1 oz) onion soup mix
  • 2 large eggs
  • 1/2 cup milk
  • 1 tbsp Worcestershire sauce
  • 2 cups caramelized onions (about 2 large onions)
  • 1 cup shredded Swiss cheese (plus more for topping)
  • 1 tbsp chopped parsley (for garnish)

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, onion soup mix, eggs, milk, and Worcestershire sauce. Mix until just combined—don’t overwork it!
  2. Shape the mixture into a loaf and place it in the crockpot. Top it with half the caramelized onions.
  3. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  4. During the last 15 minutes, top with the remaining caramelized onions and shredded Swiss cheese. Cover until the cheese is melted.
  5. Slice, garnish with chopped parsley, and enjoy!

Notes

For best results, do not overmix the meatloaf mixture. You can try adding garlic powder or herbs for more flavor.
