Ingredients

  • 1 cup cooked rice (cooled)
  • 1 can tuna (in water or oil, drained)
  • 1 cup finely chopped spinach (fresh or thawed from frozen)
  • 1 egg
  • 2 tbsp breadcrumbs (or crushed crackers)
  • 1 tbsp grated cheese (optional)
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a mixing bowl, combine the cooked rice, drained tuna, chopped spinach, egg, breadcrumbs, grated cheese (if using), minced garlic, salt, and pepper. Mix until well combined.
  2. Shape the mixture into small patties or cakes.
  3. Heat oil in a frying pan over medium heat.
  4. Fry the rice cakes for 3-4 minutes on each side, or until golden brown and crispy.
  5. Remove from the pan and drain on paper towels.
