- 1 can tuna (in water or oil, drained)
- 1 cup finely chopped spinach (fresh or thawed from frozen)
- 1 egg
- 2 tbsp breadcrumbs (or crushed crackers)
- 1 tbsp grated cheese (optional)
- 1 garlic clove, minced
- Salt and pepper to taste
- Oil for frying
Instructions
- In a mixing bowl, combine the cooked rice, drained tuna, chopped spinach, egg, breadcrumbs, grated cheese (if using), minced garlic, salt, and pepper. Mix until well combined.
- Shape the mixture into small patties or cakes.
- Heat oil in a frying pan over medium heat.
- Fry the rice cakes for 3-4 minutes on each side, or until golden brown and crispy.
- Remove from the pan and drain on paper towels.
- Serve warm, optionally with a sauce or dip.
Notes
For extra crunch, use panko breadcrumbs. Adjust seasoning to taste and feel free to add more veggies for a twist.
