Description

A delicious and nutritious gluten-free bread loaded with protein and healthy fats, perfect for breakfast or snacks.


Ingredients

Scale
  • 200 g quark or Greek yogurt
  • 3 eggs
  • 100 g ground almonds
  • 100 g mixed seeds
  • 80120 g mixed nuts
  • 30 g ground linseed
  • 16 g psyllium husks
  • 2 tsp baking soda
  • 1 tsp salt

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine quark (or Greek yogurt) and eggs, mixing well.
  3. Add ground almonds, mixed seeds, and mixed nuts into the bowl, stirring to combine.
  4. Incorporate ground linseed, psyllium husks, baking soda, and salt into the mixture, stirring until a dough-like consistency forms.
  5. Transfer the mixture into a loaf pan lined with parchment paper, shaping it evenly.
  6. Bake in the preheated oven for 30-40 minutes or until the bread is golden brown and a toothpick comes out clean.
  7. Allow the bread to cool before slicing and serving.
