  • 1 lb (450g) chicken tenders or chicken breasts cut into strips
  • 1 cup Greek yogurt
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • Cooking spray or oil for baking

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the Greek yogurt, minced garlic, lemon juice, oregano, salt, and pepper to create a marinade.
  3. Add the chicken tenders to the marinade, coating well. Let it marinate for at least 30 minutes.
  4. In another bowl, mix breadcrumbs and grated Parmesan cheese.
  5. Remove chicken from the marinade and dip each piece into the breadcrumb mixture, ensuring they are fully coated.
  6. Place the breaded chicken tenders on a baking sheet lined with parchment paper and spray with cooking spray or drizzle with oil.
  7. Bake for 20-25 minutes, or until golden and crispy.
  8. Serve immediately with your favorite dipping sauce.

Notes

For extra crunch, you can double dip the chicken tenders in the marinade and breadcrumbs.
