- 1 lb (450g) chicken tenders or chicken breasts cut into strips
- 1 cup Greek yogurt
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- Cooking spray or oil for baking
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix the Greek yogurt, minced garlic, lemon juice, oregano, salt, and pepper to create a marinade.
- Add the chicken tenders to the marinade, coating well. Let it marinate for at least 30 minutes.
- In another bowl, mix breadcrumbs and grated Parmesan cheese.
- Remove chicken from the marinade and dip each piece into the breadcrumb mixture, ensuring they are fully coated.
- Place the breaded chicken tenders on a baking sheet lined with parchment paper and spray with cooking spray or drizzle with oil.
- Bake for 20-25 minutes, or until golden and crispy.
- Serve immediately with your favorite dipping sauce.
Notes
For extra crunch, you can double dip the chicken tenders in the marinade and breadcrumbs.
